My Museli

I guess this was just made up really and whatever I happen to have in the way of nuts and seeds gets thrown in.

Ingredients (approximately)

  • One bag of jumbo oats
  • 1 c ground linseed
  • 3 tbsp cinnamon
  • 1 c pumpkin seeds
  • 1 1/2 c sunflower seeds
  • 1/2 c seaseme seeds
  • 1/2 c long thread coconut

Method

Place all ingredients in a large roasting dish or tray. Bake at 180ºC for about 45 min stirring at 15 min intervals. I always use the timer on the oven as I don’t want to forget about it and burn the seeds. To test if it is done, grab a bit, let it cool and bit and try it. It should be nice and crunchy.

Once cool I normally add some dried fruit. Maybe a cup of diced date and a cup of diced apricots. Dried kiwifruit and papaya are also nice. However, it is equally nice without the fruit if you want to avoid the added sugar.

This normally gets served with a bit of milk, some greek yogurt and sliced banana or at present stewed feijoa.
