4 oz ground almonds (114 grams)
1 cup sugar
2 large egg whites
1/2 tsp vanilla
Preheat oven to 180 degrees celcius. Place all ingredients in a bowl, beat for 3 mins. Place teaspoons of mixture onto a tray lined with baking paper, well spread apart. Leave to stand for 5 min to form a light shell. Back for 12 – 15 min until very slightly golden. Cool on a wire rack, take care as they are fragile when they come out. As the cool they will harden slightly. Enjoy!
Variations – add some grated chocolate or try half ground almond and half ground hazelnut
