This is a very simple fish dish. Check out what fish looks good at your local fish monger. This recipe goes nicely with a fleshy white fish such as snapper, terakhi, gurnard or sea bream.
- 1 fillet per person
- Tin foil to make bags
- Sea salt and pepper to season
- Finely sliced rings of red onions
- Lemons cut into rings
- Capers and Olives (optional)
- Parsley or Basil
Roll out 30cm of foil or enough to place the fillet in with excess to make the seams of the bag. Place finely sliced onion in middle of foil, place fish on onion (1-2 fillets per bag depending on size), cover with juice of ½ lemon, season with salt and pepper and herbs, place capers and olives on side of fish. Place lemon rings on top. Bring together sides of foil and lift ends. Roll sides over each other to form an envelope with the fish inside. Place on baking tray and cook for 15-15min at 180. Cooking time dependant on thickness of fillet.
