When beans are in season this is a simple yet very tasty salad to throw together. Feel free to vary the type of nuts you use and the type of citrus.
- Two handfuls of French beans (washed and both ends chopped off)
- Chopped feta
- Handful of pinenuts (toasted in oven – 180 – for 5-10min until golden – no oil)
- Cherry tomatoes halved
- Olive oil and lemon juice
Cook French beans in boiling water until you can smell them (5 min or less). Place in bowl. Season with salt and pepper, juice of ½ lemon and splash of olive oil (while hot). Place feta, pinenuts and cherry tomatoes on top. Serve and enjoy hot or cold.
