Spicy Carrot Salad

This salad is a bit of a favourite of ours and one taught to us from Sam’s Mother. It goes lovely with fish, chicken or lamb. It is quick and easy to make especially if you grate the carrot in a food processor. One word of advice – make sure you don’t mix up the amount of chilli with the paprika and then feed it to young children. Never again.

Ingredients

  • 3 grated carrots
  • 1 tsp smoked paprika
  • 1 tsp cinnamon
  • 1 tsp ginger
  • Handful chopped walnuts
  • ¼ cup soaked currants
  • Juice of ½ lemon
  • 1 tbsp melted honey

Place ingredients in bowl, toss to mix. Taste and add more honey, lemon, spices, depending on preference. Enjoy. (Can add chilli but be careful how much!).
