Quickest, easiest tomato sauce for pizza

When feeling lazy I generally use tomato paste for my pizza’s. However, yesterday I while cooking pizza, I had no tomato paste. In a hurry I threw together this tomato sauce, and am so happy with it that I will carry on with this from now on.

Ingredients

  • Olive oil
  • 2 garlic cloves
  • Tbsp dried basil
  • 1 tin diced tomatoes
  • Salt to taste
  • Cayenne pepper to taste

Method

  1. Bruise the garlic with the flat of your knife, then dice up small
  2. Heat olive oil in frying pan, then add the garlic and dried basil, cooking until the garlic starts to colour
  3. Add the tomatoes and stir through
  4. Add the salt and cayenne and stir through
  5. Reduce the liquid in the tomatoes by half, so that you have a thick sauce for spreading on the pizza
