Marinated salmon parcel

This is a very tasty and easy way to prepare salmon. Simply prepare the marinade in the morning before you go to work, then when you get home heat up the oven, put the salmon into a foil parcel and bake – what could be easier? I served this with some asparagus and beetroot.


  • 1 large fillet of skinless and boneless salmon
  • 3 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tsp sesame oil
  • 1 tsp apple cider vinegar
  • 1 tsp brown sugar
  • 1 small bunch of coriander (or a tbsp of driend coriander leaves)
  • 1 small chilli finely chopped (or a few chilli flakes or dash of Tabasco sauce)
  • 2cm chunk of fresh ginger peeled and finely diced
  • 2 cloves of garlic finely diced
  • 1 bunch of spring onions diced (or two small brown onions finely diced)


  1. Add all the liquid ingredients and the sugar in a bowl and stir to combine
  2. Chop up the chilli, ginger, garlic and onion, add to the sauce and stir through
  3. Place the salmon in the marinade, using it to grab some of the marinade turn it over to make sure that it has marinade all over
  4. Cover and place in the fridge for a few hours
  5. Pre-heat the oven to 200ºC
  6. In an oven proof dish, place enough tinfoil to fully wrap the salmon, add the salmon including the onion etc into the foil and wrap up
  7. Bake in the oven for 20-25 minutes until fully cooked
